Waffles with Pears
I can’t think of a better way to start the weekend than to prepare a delicious brunch! This one is brought to you by the fantastic Vegan Brunch cookbook. Seriously, if you don’t have it yet, what are you waiting for! Tempeh bacon, peanut butter waffles, and pears simmered in brown sugar, Earth Balance, cinnamon, and allspice! I must say that peanut butter and pears go great together.
And to continue with the fall theme and my current obsession with apples, I made a batch of apple muffins from VWAV:
The brown sugar topping on these is sooo good!

These muffins are chock full of apples and are great with a strong cup of coffee!

Today marks the beginning of VeganMoFo 2009! The challenge is to blog about all things vegan food related daily for the whole month of October and I can’t think of a better way to start than vegan snickerdoodles! I had been neglecting the blog a bit because it was just too darn hot here in Los Angeles and I was feeling uninspired. Now that the weather is starting to cooperate I am totally excited for VeganMoFo and for the beginning of fall foods! While going through my photos today I found this pancake shot from a while back that I never posted. Pancakes with whole berry sauce from Vegan Brunch!
I am still testing for Terry Hope Romero’s Vegan Latina cookbook and the latest recipe I tried was Sweet & Salty Seitan and Potato Empanadas. These empanadas are so damn good – the dough is to die for and the filling is the perfect balance between sweet and spicy.
These are some of the best empanadas I have had! If I haven’t said it enough, this book is gonna rock the vegan world by storm! Here is a close-up of the inside:

Finally got my hands on Vegan Brunch, the new book by vegan goddess Isa Chandra Moskowitz! Aside from all the great recipes it is such a darn pretty book! I can’t wait to make everything. So I decided to have brunch for dinner! I’m vegan and I break most of society’s food “norms” anyways so why not! I made the Curried Cauliflower Frittata because it sounded lovely and I had all the ingredients on hand. Check it out:

I also roasted some new potatoes with garlic and rosemary and had a salad with tomato and avocado! The frittata was really delicious and I can’t wait to try all the rest of the recipes. So if you haven’t gone out and purchased this book yet, what are you waiting for!
