Just a quickie Saturday VeganMoFo post with a picture of a very delicious tempeh bacon (from Vegan Brunch), lettuce, tomato, and cucumber sandwich. Served with some yummy plantain chips.

    That sandwich looks delicious! Are the plantain chips fried or baked? I’m totally curious as to whether I could bake up my own plantain chips, because they sound super good. 🙂 -Eve

    Thomas – the bread is from Jon’s on Fountain & La Brea. The have a fantastic bread selection and all is super fresh and cheap!

    taleoftwovegans – when I make plantain chips at home I usually fry them like potato chips. The ones in the picture are actually a bag I bought at Trader Joe’s. I’ve never tried to bake them but I believe its quite possible!
